9 Ingredients

  • 12grams instant yeast
  • 3 1/2 cup plain flour
  • 30grams butter
  • 1 large onion, sliced
  • 1 pinch Pepper (for seasoning)
  • 2tablespoons olive oil
  • 2 rosemary sprigs
  • 1teaspoons caster sugar
  • 2teaspoons salt

Method

Step 1 of 10

Stir yeast and sugar into 1/2 cup of water. Set aside for 10 minutes until foamy.

Sift flour and 1 teaspoon salt into a large mixing bowl. Make a well in the centre. Add yeast mixture, olive oil and enough water (1/2 cup) until a soft dough forms.

Transfer to a lightly floured surface and knead for about 10 minutes or until the dough is soft and elastic.

Transfer to a clean, lightly oiled bowl and cover with plastic wrap. Leave to rise in a draught free place for about an hour or until doubled in size.

Meanwhile, melt butter in a large frying pan over medium heat. Add onions and 1 teaspoon salt. Cook for 15 minutes, stirring occasionally until onions are golden. Cool.

When dough has doubled, punch the dough to deflate. Add onions and mix well through the dough.

Oil a large baking tray and press the dough out to 20x30cm rectangle. Brush with extra olive oil. Push rosemary sprigs into dough and sprinkle with salt and pepper.

Cover with a tea towel and leave for 15 minutes. Preheat oven to 200°C.

Bake bread for 20 minutes, or until top is golden and the bottom sounds hollow when tapped.

Serve hot, straight from the oven or leave to cool on a rack and serve.
