  • 50grams Gruyère cheese, grated
  • 25grams Parmesan cheese, grated
  • 1tablespoons wholegrain mustard
  • 4 egg yolks
  • 4 egg whites

Method

Step 1 of 3

Melt the butter in a pan over a low heat. Sprinkle in the plain flour. Cook, stirring, for a couple of minutes, then add the milk, a little at a time, stirring constantly.

Step 2 of 3

Add the grated Gruyère cheese, grated Parmesan cheese, and wholegrain mustard. Continue stirring until the cheese has melted. Season.

Step 3 of 3

Once tepid, beat in the egg yolks. Whisk the egg whites to soft peaks. Gently fold the whites into the cheese mixture, a little at a time, until combined. Divide the mixture between 4 ramekins, leaving space at the top, and bake in a preheated 200°C oven for 12–15 minutes until risen.
