  • 2 zucchinis
  • 1 small sweet potato
  • 420grams corn kernels (one tin)
  • 2 cloves garlic
  • 1 cup plain flour
  • 2 large eggs
  • 1/2 cup vegetable oil

An easy and moreish treat that's adaptable.

Method

Step 1 of 9

Grate or julienne the zucchinis and pop onto a clean cloth. Wring/squeeze the water out. Put dried zucchini in large mixing bowl.

Step 2 of 9

Julienne/grate the sweet potato and add to bowl.

Step 3 of 9

Drain the corn and add to bowl.

Step 4 of 9

Finely dice or grate the garlic and add to bowl.

Step 5 of 9

Crack 2 eggs into a small bowl and whisk. Add to mix in large bowl.

Step 6 of 9

Add 3/4 to 1 cup of plain flour to bowl. Combine well.

Step 7 of 9

Heat a frypan over med-high heat and add 1-2 tbs of oil (more if you're prefer your fritters crispier). Spoon about 1/2 cup mix into oil and flatten with spoon.

Step 8 of 9

Let mix cook until bottom edges starts to brown. It's important to let the bottom crisp up before flipping. Flip to cook other side.

Step 9 of 9

Remove from pan and rest on kitchen paper to absorb excess oil. Season with salt/pepper. Enjoy on their own or lovely with some mushy avocado.
