- 1 cup milk
- 2 eggs
- 2 large corn cobs, kernels removed
- 1 zucchini, ends trimmed, grated
- 1/2 cup olive oil, for frying
- 1teaspoons salt
- 1teaspoons pepper

Easy to make and very tasty.
Method
Step 1 of 2
Sift flour into a large bowl. Season with salt and pepper. Using a fork, whisk milk and eggs together in a jug until combined. Pour over flour. Stir until smooth. Add corn and zucchini. Stir until well combined.
Step 2 of 2
Add oil to large non stick frying pan. Heat oil on medium heat until hot. Using a 1/4 cup of mixture per fritter, pour batter into pan 3 fritters at one time. Cook for 3 to 5 minutes each side or until golden. Drain on paper towels. Serve.
