- 6 eggs
- 1 cup self raising flour
- 1 cup grated tasty cheese
- 1 medium zuchinni, grated
- 1 onion, grated
- 1 small sweet potato, grated
- 1 cup bacon, diced (or ham)
- 1tablespoons curry powder
- 1teaspoons salt and pepper (to taste)
- 1tablespoons aioli (to serve)

Description
A yummy brunch or lunch box favourite. Delicious hot or cold!
Method
Step 1 of 7
Preheat a fan forced oven to 180 degrees. And line or grease a slice tray.
Step 2 of 7
Beat together 6 eggs and slowly add in the flour.
Step 3 of 7
Add bacon, grated zucchini, sweet potato, onion and half of the cheese. Stir to combine.
Step 4 of 7
Add curry powder and salt and pepper to taste.
Step 5 of 7
Pour into lined/greased tray and top with remaining cheese.
Step 6 of 7
Bake for 25 minutes. Slice will be ready when it is golden brown and firm to touch.
Step 7 of 7
Allow to cool, slice into 12 slices and serve with aioli either warm or chilled. Enjoy!
