Zucchini Sweet Potato and Spinach Slice

- 2tablespoons olive oil
- 2 large onions, sliced (or leeks)
- 1/2 sweet potato, grated
- 2 large carrot, grated
- 2 garlic cloves, crushed
- 150grams baby spinach (or finely chopped silver beet)
- 8 eggs
- 4 egg whites
- 150grams crumbed feta
- 2 small zucchini, grated, excess moisture removed
- 1/2 cup plain flour
- 1 cup cream
- 2tablespoons fresh parsley chopped
- 2tablespoons fresh chives chopped
- 2 cups grated cheese (i use half tasty half parmesan)
Description
This slice is great warm from the oven, but also great cold for a picnic or the school/work lunch box.
Method
Step 1 of 7
Preheat oven to 180C. Grease and line 2, 20 x 20 lamington square trays with non stick foil.

Heat the oil in a large non-stick frying pan over medium heat. Cook the onion or leek stirring, for 3 minutes or until soft. . Add in the garlic, parsley and chives and stir for 1-2 minutes or until soft.

If needed add another drop of oil, add zucchini, sweet potato, carrot and cook for 2 minutes. Turn the heat off and add baby spinach or silverbeet and let it wilt with the heat of the pan.

Whisk the eggs, egg whites and flour in a large bowl until smooth. Add cream. Stir the zucchini mixture, into the egg mixture and season.

Pour the mixture into the prepared pans and add the crumbled feta in.

Cover with your choice of grated cheese.

Bake for 40-50 minutes or until golden and cooked through. Set aside to cool slightly, remove from tray and serve warm or cold.
