Description
A frittata is basically a grilled omelette, and a mainstay of Italian family cooking. This one makes a great lunch.
Method
Step 1 of 4
Heat the oil in a 25cm heavy-based, ovenproof frying pan. Fry the pancetta for 3-5 minutes until it starts to brown at the edges. Set aside. Wipe the pan with kitchen paper. Preheat the grill on its highest setting.
Step 2 of 4
Whisk together the eggs, cream, and Parmesan, and season well (go easy on the salt, as the Parmesan and pancetta are salty). Add the peas (they will cook in the frittata) and pancetta, and mix well.
Step 3 of 4
Melt the butter in the frying pan over a medium heat and pour in the egg mixture. Cook for 5 minutes, without moving it, until the edges start to set.
Step 4 of 4
Transfer the pan to the grill and cook for 5 minutes until the frittata is set and golden brown. Rest for at least 5 minutes. Cut into wedges and serve warm or at room temperature.
