Description

Shaved brussels sprouts and creamy feta make this frittata a tasty and easy lunch or dinner option.

Method

Step 1 of 3

Pre-heat the oven to 200°C. Heat the oil in a large, oven-proof pan on medium heat and cook the brussels sprouts and spring onions for 5 minutes. Stir in the garlic and cook for 2 minutes.

Step 2 of 3

Whisk the eggs, half of the feta and cracked black pepper together in a bowl an pour over the brussels sprout mix. Dot the rest of the feta on top. Cook for 3-4 minutes until just set around the edges.

Step 3 of 3

Place the pan into the oven and cook for 10-12 minutes until set.
