Method
Step 1 of 6
Peel sweet potato and shred or coarsely grate into a bowl.
Step 2 of 6
Shred or grate zucchini and add to bowl with flour, ginger, egg and sweet chilli sauce. Mix together.
Step 3 of 6
Add oil to pan and heat over medium heat. Place large spoonfuls of the fritter mixture into pan and flatten out slightly. Fry for 2 minutes each side, until golden and crisp.
Step 4 of 6
Remove from pan and place 2 fritters onto each serving plate.
Step 5 of 6
Top fritters with avocado.
Step 6 of 6
Serve warm.
