  • 1 onion, finely chopped
  • 2 celery stick, finely chopped
  • 1 small carrot, grated
  • 2 small zucchini, grated, excess moisture squeezed out
  • 1 clove garlic, crushed
  • 400grams mixed beans, drained and rinsed
  • 50grams breadcrumbs, fresh
  • 1teaspoons dried mixed herbs

Description

These delicious burgers are a great meat alternative that your whole family can enjoy.

Method

Step 1 of 4

Heat the oil in a heavy-based saucepan. Cook the onion, celery, carrot, and courgette for 5 minutes over a medium heat until softened. Add the garlic and cook for a further minute. Cool.

Step 2 of 4

Put the pulses in a bowl and mash with a potato masher to a texture that suits your child. Add the vegetables, breadcrumbs, and herbs, and mix.

Step 3 of 4

Use damp hands to form eight 6cm patties, pressing them lightly between your palms. Cover and chill for 30 minutes.

Step 4 of 4

Heat the oil in a frying pan and cook the burgers for 3-4 minutes on each side, turning carefully, until browned and crispy. Serve with ketchup for older children.
