- 400grams green prawns, peeled, chopped
- 1/2 small red onion, finely chopped
- 2tablespoons flat leaf parsley, finely chopped (plus parsley leaves, to serve)
- 1/2teaspoons smoked paprika
- 1/4teaspoons bicarbonate of soda
- 1/2 cup chickpeas, drained, mashed
- 1 lemon, cut into wedges (to serve)
- garlic aioli (to serve)
- rice bran oil (or vegetable oil, for shallow frying)
- 2 egg whites
- 150milliliter soda water, chilled
- 1/2 cup chickpea flour
Method
Step 1 of 4
Combine flour, bicarbonate of soda, smoked paprika and 1 tsp salt in a bowl. Whisk to combine. Make a well in the centre, add soda water and whisk until smooth.
Step 2 of 4
Combine onion, parsley, prawns and chickpeas in a bowl. Season with pepper. Add to batter and stir well.
Step 3 of 4
In a clean bowl, whisk egg whites until soft peaks form. Gently fold into batter. Heat 1cm of oil in a deep frying pan and using 2 tbs of mixture for each, cook fritters for 2-3 minutes each side or until golden. Drain on paper towel.
Step 4 of 4
Serve fritters with aioli and lemon wedges and garnish with parsley.
