- 1 ball pizza dough
- a little plain flour (to dust)
- a little semolina (for sprinkling)
- 200grams fresh spinach, wilted and drained
- 125grams cooked ham, chopped
- 125grams mozzarella, torn into pieces
- 1 handful torn basil leaves
Method

Preheat the oven to its highest setting. Very lightly oil a baking tray and put it in the oven to get hot.

Place the dough on a floured surface and use a rolling pin to roll it out as thinly as you can - about 25-30cm (10-12in) in diameter.

Sprinkle the hot baking tray with semolina and transfer the dough onto it.

Squeeze any remaining liquid from the spinach, and spread it over half the pizza base, leaving about 1cm ( 1 / 2 in) around the edge.

Top with the ham, mozzarella, and basil, then dampen all around the edge of the pizza with water.

Fold one half of the pizza over the other, seal the edges together with your fingers, then sprinkle the top with a little water.

Bake for 15-20 minutes, or until golden and crispy.
