- 340grams sweetcorn, drained
- 1teaspoons cayenne pepper
- 1 pinch salt

Put the flour, fizzy water, and baking powder in a bowl and mix well with a whisk to form a smooth batter. Add the sweetcorn and cayenne, season well with salt and black pepper, and stir to combine. Chill in the refrigerator for 15 minutes.

Heat the oil in a shallow frying pan over a high heat. Stir the batter mixture, then carefully place a spoonful of the mixture into the pan - it should spread out to be 7.5-10cm across. Add 2-3 spoonfuls more, depending on the size of your pan, and cook in batches for 3 minutes on each side, or until golden brown. Remove with a slotted spoon and place on kitchen paper to remove any excess oil. Serve with aïoli and a crisp green salad.
