  • 125grams broccoli florets
  • 200grams low-fat cream cheese with garlic and herbs
  • 3/4 cup single cream
  • 150grams ham, finely chopped
  • 25grams Parmesan cheese, finely grated
  • 8 ready-made pancakes
  • 8 freshly ground black pepper
  • 60grams mozzarella cheese, grated
  • 50grams fresh breadcrumbs
  • 600grams green salad (to serve)
  • butter (to serve)

Description

Using shop-bought pancakes makes this recipe simple and achievable even for young children in the kitchen.

Method

Step 1 of 4

Preheat the oven to 180°C. Grease a baking tray. Cook the broccoli in boiling water for 5 minutes. Drain.

Step 2 of 4

Place the cream cheese and cream in a pan over a medium heat. Warm through, stirring, until the cream cheese has melted and the mixture is smooth. Stir in the broccoli, ham, and parmesan.

Step 3 of 4

Place a pancake on a work surface and spread one-eighth of the filling over, seasoning with black pepper. Roll up and place on the baking tray. Repeat with the remaining pancakes and filling.

Step 4 of 4

Sprinkle with mozzarella and breadcrumbs. Bake in the oven for 20 minutes. Serve the cannelloni hot with a green salad.
