  • 300grams strong white flour
  • 1teaspoons dry yeast, fast action
  • 1teaspoons caster sugar
  • 2 1/2tablespoons olive oil
  • 1 egg, beaten
  • 1teaspoons sea salt
  • 1 medium red onion, finely sliced
  • 1teaspoons cumin
  • 250grams spinach
  • 40grams ricotta
  • 30grams feta

Description

These Turkish pides make a delicious light lunch or snack, filled with lightly spiced spinach and feta spiked ricotta.

Method

Step 1 of 5

Tip the flour, sugar, yeast and salt into a large bowl and stir to combine. Add 80ml of warm water and 2 tablespoons of oil and mix to combine. Tip on to a lightly floured work surface and knead for 5 minutes until smooth and springy.

Step 2 of 5

Place in an oiled bowl and cover with a damp towel. Set aside to rise in a warm place for 1 hour.

Add the remaining oil to a large pan on medium heat and cook the onions for 5 minutes. Add the cumin and spinach and cook for 2-3 minutes, until wilted, adding the spinach in batches.

Pre-heat the oven to 180°C. Mix the ricotta and feta together in a small bowl. Tip the dough on to a floured work surface and cut into 4 pieces. Roll each piece into an oval shape.

Step 5 of 5

Place the dough ovals on a lined baking tray and spoon the spinach mix onto each, leaving a border around the edges. Roll the edges up to form a crust. Top with filling with ricotta mix. Brush the edges with beaten egg and bake for 10-15 minutes until golden and crisp.
