- 2 large eggs, beaten
- 100grams plain flour
- 1teaspoons baking powder
- 2 spring onions, finely sliced, green tops reserved
- 1 medium green chilli, diced
- 200grams Greek yoghurt
- 1/2 bunch coriander, fresh, chopped
- 1/2 medium lime, zest
- 2tablespoons olive oil

Description
The whole family will love these simple and slightly spicy sweetcorn fritters with creamy coriander dip.
Method
Step 1 of 4
Tip 3/4 of the sweetcorn into a food processor with the eggs, flour, baking powder, spring onions and chilli and blitz to form a batter. Stir through the remaining corn kernels.
Step 2 of 4
Whisk the yoghurt, finely chopped coriander and lime zest together in a medium bowl.
Step 3 of 4
Heat the oil in a large pan on medium high heat and add 4 tablespoons of batter. Cook for 1-2 minutes on each side. Repeat with the rest of the oil and batter.
Step 4 of 4
Serve the fritters with coriander yoghurt and spring onion tops scattered over the top.
