- 2 cups wholemeal self raising flour
- 1/2 cup grated parmesan
- 1/2 cup grated tasty cheese
- 1/2 cup crumbled greek fetta
- 60grams fresh spinach
- 1 cup tomato paste
- 1teaspoons crushed garlic (mix with tomato paste)
- 1 cup small pumpkin, diced (roasted with olive oil sea salt and black pepper)
- 100grams salted butter, diced
- 50grams pitted kalamata olives, sliced
- 2tablespoons chopped basil
- 1/2 cup milk (to mix to a soft dough, dont over mix)

Description
Tomato, spinach, fetta, tasty and parmesan cheese, roasted pumpkin cubes and kalamata olives in a wholemeal scroll perfect for afternoon or morning tea.
Method
Step 1 of 6
In a large bowl, place parmesan butter and flour with basil and rub with your fingertips until resembles coarse breadcrumbs.
Step 2 of 6
Add milk to mix to a soft dough, don't overmix.
Step 3 of 6
Using a floured bench, place the dough down and scatter a small amount of extra flour sprinkled over it use a piece of baking paper and a rolling pin, roll out to a rectangle about 2 cm thick.

Remove baking paper and spread with tomato paste, sprinkle evenly with all other ingredients.
Step 5 of 6
Roll lengthways tightly into a long scroll, give the log a bit of a roll on your bench to ensure it is not going to break apart on you.
Step 6 of 6
Cut into 3cm slices about 1 cm apart on a greased baking sheet, bake in preheated oven 140°c normal or 150°fan forced for approximately 15-18 minutes or until well risen and golden, serve warm.
