  • 400grams white long grain rice
  • 1L chicken stock (or veg stock)
  • 50grams butter
  • 1tablespoons garlic
  • 2 onions
  • 1 punnet cherry tomatoes
  • 200grams mushrooms
  • 70grams rocket
  • 1tablespoons turmeric
  • 1 pinch chili powder
  • 1 pinch cayenne pepper
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)

Description

Delicious fragrant rice, great as a side or as a meal.
Instruction tip
This is pretty kid-friendly, but it would be great with more cayenne and chili for a bit more kick.

Method

Step 1 of 8

Preheat your oven to 180°C

Step 2 of 8

In a deep baking dish put the rice, cherry tomatoes, spices, and the onion you just cooked. Add the hot stock and mix so everything is fairly even. Cover with tinfoil to keep the moisture in, and put in the oven for 1 hour.

Chop the onions and fry off in a little butter until browned, and add the garlic in when it is almost cooked.

At the same time heat up the stock in a pan. You can use vegetable stock if you would prefer that over chicken stock.

Quickly cook off the mushrooms in butter, with a little salt and pepper. Once they are cooked mix them through the rice with the rocket, serve and enjoy.

While the rice is cooking chop up the mushrooms and set aside. Then finely slice the rocket. I find the easiest way is to scrunch into a tight handful and finely slice.

When the timer goes off remove the tray from the oven and leave to rest with the foil on for a few minutes.

If you want meat, this works great with 8 or so chicken drumsticks spread evenly on top of the rice as they take the same time to cook. Then while your cooking the mushrooms grill the cooked drumsticks quickly if you want a crispy skin on them.
