  • 250grams sweet potato, peeled and grated
  • 1 medium zucchini, grated, well squeezed
  • 1 rashers bacon, chopped
  • 1 medium onion, finely chopped
  • 4 eggs, lightly beaten
  • 1 cup self raising flour, sifted
  • 2 cloves garlic, smashed, finely chopped
  • 3/4 cup tasty cheese, grated
  • 1/4 cup parmesan cheese, grated
  • 2tablespoons parsley, finely chopped, can use dried
  • 2teaspoons olive oil
  • 1/4teaspoons pepper
  • 1/4 cup bread crumbs (optional)

Description

Delicious served hot or cold for lunch, brunch or dinner. Great for lunch boxes. Slice to whatever size slice you desire.

Method

Step 1 of 8

Gather all ingredients together. Preheat oven to 180 degrees fan. Grease and line (with over hang on each side to act as a handle to lift out) a 20 cm square ovenproof baking dish.

Step 2 of 8

In a frypan on medium heat, add oil and onion, cook for 3 minutes stirring often, do not brown, add garlic and cook a further minute. Off the heat and set aside to cool slightly.

Step 3 of 8

Into a large mixing bowl add flour, sweet potato, zucchini, bacon, cheeses, parsley, pepper and mix well to combine.

Step 4 of 8

Add beaten eggs, cooled onion and garlic, mix well again.

Step 5 of 8

Spoon mixture into prepared baking dish and smooth the top.

Step 6 of 8

This step is optional - I like to scatter bread crumbs over the top before baking in the oven. Gives a lovely toasty topping.

Step 7 of 8

Bake at 180 degrees fan for 45 minutes or until cooked in the centre.

Step 8 of 8

Remove from oven and set aside to cool for five minutes before removing from baking dish. Slice to whatever size slice you desire.
