- 4 spring onions (thinly sliced)
- 8 Qukes (sliced)
- 3 zucchini (coarsely grated)
- 185grams tuna in springwater (coarsely flaked)
- 1teaspoons pure honey
- 1tablespoons lemon juice
- 300grams tomato medley mix (halved)
- 250grams microwave brown basmati rice
- 60grams mixed baby salad leaves
- 3teaspoons olive oil
- 6 free range eggs (lightly whisked)
- 3/4 cup coarsely grated cheddar
- 3/4 cup frozen Australian baby peas

Method
Step 1 of 3
Preheat oven to 180°C. Grease and line a 20x30cm slice pan with baking paper, leaving 3cm overhang on both long sides.
Step 2 of 3
Combine egg, rice, cheddar, zucchini, peas and onion in a bowl. Season, then pour into pan. Top with tuna and bake for 30 minutes or until set and golden.
Step 3 of 3
Meanwhile, combine oil, juice and honey in a bowl. Season. Add tomato, Qukes and salad leaves and toss gently to combine. Cut slice into wedges, scatter over basil leaves and serve with salad.
