  • 2tablespoons basil leaves (to serve)
  • 4 spring onions (thinly sliced)
  • 8 Qukes (sliced)
  • 3 zucchini (coarsely grated)
  • 185grams tuna in springwater (coarsely flaked)
  • 1teaspoons pure honey
  • 1tablespoons lemon juice
  • 300grams tomato medley mix (halved)
  • 250grams microwave brown basmati rice
  • 60grams mixed baby salad leaves
  • 3teaspoons olive oil
  • 6 free range eggs (lightly whisked)
  • 3/4 cup coarsely grated cheddar
  • 3/4 cup frozen Australian baby peas

Method

Step 1 of 3

Preheat oven to 180°C. Grease and line a 20x30cm slice pan with baking paper, leaving 3cm overhang on both long sides.

Step 2 of 3

Combine egg, rice, cheddar, zucchini, peas and onion in a bowl. Season, then pour into pan. Top with tuna and bake for 30 minutes or until set and golden.

Step 3 of 3

Meanwhile, combine oil, juice and honey in a bowl. Season. Add tomato, Qukes and salad leaves and toss gently to combine. Cut slice into wedges, scatter over basil leaves and serve with salad.
