- 400grams ready-made shortcrust pastry
- 200grams cooked ham, chopped into bite-sized pieces
- 8 eggs, 1 egg lightly beaten, for egg wash
- 1/3 cup double cream
- 1 pinch salt
- 1 pinch freshly ground black pepper
Method
Step 1 of 3
Preheat the oven to 200°C. Halve the pastry, then roll out both pieces on a floured work surface to fit the pie tin. Use one of the pieces to line the tin, making sure that the pastry fits neatly into the corners.

Scatter the ham evenly over the bottom of the pastry shell. Carefully break the 6 eggs into the shell, positioning them evenly and making sure that the yolks remain whole. Pour over the cream, and season well with salt and black pepper.

Wet the edges of the pastry shell with a little water, then cover with the other piece of pastry to make a lid. Trim away the excess, and press the edges of the pastry together with your finger and thumb to seal. Brush with a little of the egg wash, and bake in the oven for 25-35 minutes until golden brown. Leave to cool for at least 10 minutes before slicing. Serve warm or cold with a fresh tomato salad.
