  • 1/2teaspoons baking powder
  • 1 cup milk
  • 180grams tasty cheese
  • 60grams parmesan
  • 1/2 cup light olive oil
  • 2 cup fine rice flour
  • 2 eggs, whisked

Method

Step 1 of 4

Preheat oven to 200°C. Line a 12-hole muffin tin with baking paper.

Step 2 of 4

Place milk and oil into a saucepan. Season with salt and pepper. Place over medium heat. Cook for 4 minutes or until mixture just comes to the boil.

Step 3 of 4

Transfer to a food processor. Add rice flour, baking powder and egg. Process until well combined. Grate parmesan and 120g tasty cheese. Set 2 tbs parmesan aside. Add remaining grated cheese to the food processor and process until just combined.

Step 4 of 4

Spoon mixture into prepared tins. Cut remaining tasty cheese into small squares. Press a square into each bread and sprinkle with reserved parmesan. Bake for 20 minutes or until puffed and golden. Serve warm.
