- 2 puff pastry (thawed slightly)
- 3tablespoons pizza sauce
- 1 tomato (thinly sliced)
- 1/4 cup crumbled feta
- 1 free range egg (lightly beaten)
- 1 handful basil leaves

Method
Step 1 of 3
Preheat oven to 200°C. Line a baking tray with baking paper.
Step 2 of 3
Cut each pastry sheet into four squares. Fold each square loosely into a triangle. Starting from the folded side, cut a 1cm border, stopping 1cm before connecting at the pointy end. Place thumbs on the two points of your squares where the pastry centre is still attached to the border. Twist these corners once. The border will now overlap the centre square. Place on tray and brush edges with beaten egg.

Spread each pastry with 1 tsp pizza sauce, top with tomato, sprinkle with feta and season with pepper. Bake for 20 minutes or until pastry is golden. Sprinkle with basil leaves to serve.
