- 2 sheet frozen puff pastry, partially thawed
- 2tablespoons demerara sugar (to sprinkle)
- 2/3 cup thick custard
- 1 egg, whisked
- 1/3 cup natural flaked almonds
- 8 canned apricot halves

Method
Step 1 of 4
Preheat oven to 200°C. Line two large baking trays with baking paper.
Step 2 of 4
Cut each pastry sheet into 4 squares. Transfer to trays. Using a small sharp knife, make a right-angled cut in 2 of the corners, 1cm in from the edge. Gently lift a cut corner and fold over the centre. Repeat with other corner, tucking one under the other.
Step 3 of 4
Place 1 tbs custard in the centre. Top with an apricot half, cut side down. Repeat for all 8 squares.
Step 4 of 4
Brush pastry with egg. Sprinkle with almonds and sugar. Bake for 20 minutes or until golden and puffed.
