Description

This is the simplest way to make a quick puff pastry, but if time is short use shop-bought instead.

Method

Step 1 of 5

Freeze the butter for 30 minutes, until semi-frozen. Dust a large grater with flour (to stop the butter sticking). Grate the butter into a large bowl. Rub in the flour and salt with your fingers. Add 4-5 tbs of cold water and bring it together to form a dough. Wrap it in cling film and chill for 30 minutes. Preheat the oven to 200°C (Gas 6).

Roll the pastry out on a floured work surface into a rectangle about 20 x 30cm.

Brush the surface of the pastry with the egg yolk and sprinkle over the smoked paprika. Sprinkle the cheese over in a thin layer, and press it in well with the flat of your hands. Fold the pastry in half and press down well to enclose the cheese totally.

Step 4 of 5

Cut the pastry into 15 strips, each about 1cm wide. Hold the top of each strip and twist the bottom a few times to make a pastry spiral.

Step 5 of 5

Place the cheese straws onto a baking sheet and bake for 15 minutes at the top of the oven. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
