  • 3 cups cold mashed potato
  • 2 jalapenos
  • 2 rashers bacon
  • 1/2 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1/4teaspoons salt
  • 1/4teaspoons pepper
  • 2 eggs, beaten
  • 220grams panko breadcrumbs

Description

Perfect most delicious way to use up left over mash potato!! We absolutely love them.

Method

Step 1 of 6

Chop bacon into small pieces and fry until cooked. Put aside to cool.

Step 2 of 6

Finely chop jalapeno. Take some seeds or all out depending on the level of spice you like.

Step 3 of 6

Put cold potatoes in a bowl along with the salt, pepper, cheeses, jalapeno and bacon.

Step 4 of 6

Roll into balls and put in the freezer for 10 mins just to firm them up and make it easier to crumb them.

Step 5 of 6

Take balls out and dip into egg mixture then into panko crumbs.

Step 6 of 6

Deep fry at 190 degrees for about 5 minutes or until they are nice and golden and potatoes are hot in the centre. Enjoy the deliciousness.
