Got an hour to kill in lockdown? Try this easy pita bread recipe that packs a flavor punch. Perfect for lunch boxes and to serve with dips

Method

Step 1 of 8

Add your dry ingredients to a bowl and whisk to combine.

Step 2 of 8

Making a well in the centre, add your olive oil and water. Mix to combine, then knead vigorously by hand for 3-5 minutes until a sticky dough forms.

Place your dough in a stainless steel bowl, cover with a tea towel, and leave in a warm place for 15 minutes.

Turn your sticky dough onto a very, very well floured surface. I cannot stress this enough, pop plenty of flour down to avoid sticking as this mix is a very damp one.

Divide your dough into portions with a sharp knife. The smaller the portion, the smaller the pita. I find I get about 12-13 in a good 6-8 inch size.

Using a well floured rolling pin, roll your pitas out flat. you want them quite thin as they do fluff up a bit in the pan.

This is the thickness I try and achieve.

Using a good quality non stick pan, cook each pita for 1-2 minutes on each side on a medium-high heat. The timer app on your phone may help with this. It is very important not to cook these for longer than 2 minutes each side of the will become very hard and crunchy. Which is lovely as a chip but if you are wanting a soft flexible wrap try and keep the time to a minimum.
