Method

Step 1 of 5

Place 375ml lukewarm water in a large bowl, then sprinkle over yeast. Stir a little. Add flour over the top of the liquid and add salt (ensuring the salt doesn’t touch the water mixture).

Mix gently with a spatula until combined. Cover bowl with a tea towel and leave in a warm spot overnight – up to 24 hours or until dough has bubbled and doubled.

Turn dough out onto a lightly floured surface. Add a little extra flour and gently flatten. Fold and flatten dough 5 times, then shape into a ball. Place dough in a greased bowl and set aside for 30 minutes to rest.

Place a Dutch oven/cast-iron casserole pan in oven and heat to 230°C/210°C fan-forced. Remove dough from bowl and place on a sheet of baking paper. Using a sharp knife, make a cross in top of dough. Using the baking paper, lift dough and carefully place into hot pan. Cover pan with lid and bake for 30 minutes.

Step 5 of 5

Remove lid, spray with oil, then bake for a further 20 minutes or until golden and hollow sounding when tapped. Transfer to a wire rack to cool.
