- 2 tomatoes, sliced
- 4 slice fresh pineapple
- 1 brown onion, grated
- 1/3 cup continental parsley leaves, chopped
- 150grams middle rashers bacon
- 1/3 cup whole-egg mayonnaise
- 1 1/3 cup rocket salad mix
- 4 slice smokey cheese
- 500grams pork & veal mince
- 1tablespoons olive oil
- 4 eggs
- 100grams potato crisps (to serve)
- 225grams can sliced beetroot, drained
- 260grams burger relish
- 4 brioche burger rolls, halved
- 2/3 cup panko breadcrumbs

Method
Step 1 of 5
Preheat oven to 180°C. Line 1 baking tray with baking paper and a second tray with paper towel.
Step 2 of 5
Combine mince, onion, breadcrumbs, parsley and 1/2 cup relish in a bowl. Season. Form mixture into 4 patties.
Step 3 of 5
Heat oil in a non-stick frying pan over medium heat. Add patties and cook for 3 minutes on each side or until golden. Transfer to tray with baking paper. Top with cheese. Bake for 10 minutes or until cooked through.

Meanwhile, cook pineapple in frying pan for 2 minutes on each side or until golden. Transfer to second tray. Cook bacon for 6 minutes or until golden and crisp. Transfer to tray with pineapple. Fry eggs for 2-3 minutes. Cover to keep warm.
Step 5 of 5
Spread roll bases with mayonnaise. Top with salad, tomato, beetroot, pattie, pineapple, egg and bacon. Season with cracked pepper. Serve with crisps.
