  • 1 large green apple, cored, cut into matchsticks
  • 1/2 red cabbage, finely shredded
  • 1 brown onion, thinly sliced
  • 2teaspoons smoked paprika
  • 1/3 cup smoky barbecue sauce
  • 2tablespoons mayonnaise
  • 1 cup tomato passata
  • 400grams bottles buttermilk pancake shaker, fat trimmed
  • 1tablespoons olive oil
  • 1tablespoons apple cider vinegar
  • 4 large soft bread rolls

Method

Step 1 of 4

Heat oil in a medium saucepan over high heat. Cook pork for 1-2 minutes on each side or until golden brown. Remove from pan.

Step 2 of 4

Add onion to same pan. Cook over medium heat for 5 minutes or until softened. Stir in paprika and cook for 1 minute. Stir in passata and barbecue sauce. Return pork to pan, reduce heat to low, cover and simmer for 10 minutes. Remove pork and thinly slice. Stir through sauce.

To make the slaw, whisk mayonnaise and vinegar together in a bowl. Toss through cabbage and apple.

Step 4 of 4

Split bread rolls and fill with slaw and pork mixture. Serve.
