  • 1 small red chilli, deseeded and chopped
  • 2teaspoons ginger, grated
  • 2 red onions, sliced
  • 8 long fresh bread rolls (to serve)
  • 3/4 cup red wine vinegar
  • 60grams rocket leaves (to serve)
  • 2tablespoons olive oil
  • 3/4 cup brown sugar
  • 8 beef sausages
  • 1teaspoons salt

Method

Step 1 of 4

Heat oil in a frying pan over a high heat. Add onion and capsicum and cook, stirring occassionally, for 10 minutes or until golden brown and softened. Transfer to a bowl and set aside.

Step 2 of 4

Add chilli, garlic, ginger and 100ml of red wine vinegar to the frying pan and bring to the boil, stirring constantly. Reduce heat and simmer for 5 minutes. Return onion mixture to pan with remaining vinegar, brown sugar and salt. Cook for 5 minutes or until thickened.

Step 3 of 4

Meanwhile, preheat a BBQ hotplate on medium. Add sausages and cook, turning regularly, for 10-15 minutes or until cooked through.

Step 4 of 4

Split bread rolls and open out flat. Fill each with a sausage and top with onion relish and some rocket leaves.
