- 1 small continental cucumber
- 1tablespoons flat leaf parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 cup Greek-style yoghurt
- 12 lamb and mint sausages
- 3teaspoons lemon juice
- 12 soft hotdog rolls
- 1 gem lettuce, leaves separated
- 1 clove garlic, crushed

Method
Step 1 of 5
For tzatziki, coarsely grate cucumber and squeeze to remove excess moisture.
Step 2 of 5
Place yoghurt, garlic, oil, lemon juice and parsley in a bowl. Whisk well to combine. Stir in cucumber. Refrigerate until ready to serve.
Step 3 of 5
Chargrill or barbecue sausages over medium heat, turning regularly, for 8-10 minutes or until cooked through.
Step 4 of 5
Cut the rolls open lengthways, without cutting all the way through.
Step 5 of 5
Fill each roll with lettuce and a sausage. Finish with a dollop of tzatziki. Serve.
