  • 1/3 cup fresh continental parsley leaves
  • 3teaspoons mild paprika
  • 1tablespoons lemon juice
  • 1/2 cup roasted piquillo peppers, sliced
  • 1/3 cup whole egg mayonnaise
  • 60grams baby rocket salad
  • 400grams pork and veal mince
  • 1tablespoons olive oil
  • 1/2 cup extra tasty cheese, coarsely grated
  • 4 slice Spanish serrano
  • 4 hamburger buns, split
  • 3 cloves garlic, crushed

Method

Step 1 of 5

Combine mince, paprika and garlic in a bowl. Season to taste. Shape mixture into 4 patties.

Step 2 of 5

Preheat oven grill. Heat oil in a large ovenproof frying pan over medium-high heat. Cook patties and serrano for 10 minutes, turning halfway, or until patties are browned and cooked through and serrano is crisp. Transfer serrano to a plate.

Step 3 of 5

Sprinkle cheese evenly over patties. Grill patties and cut sides of buns for 5 minutes or until cheese has melted and buns are browned.

Step 4 of 5

Meanwhile, process mayonnaise, parsley and lemon juice in a small food processor until almost smooth and combined. Season to taste.

Step 5 of 5

Place bun bases on plates. Top each with patties, serrano, peppers and rocket. Spread bun lids with mayonnaise and serve.
