- 1 onion
- 1/2 bunch flat-leaf parsley, chopped (plus parsley leaves, to garnish)
- 1 fennel bulb, shaved
- 1 zucchini
- 1/2teaspoons dried oregano
- 1tablespoons red wine vinegar
- 1/3 cup parmesan, shaved
- 2/3 cup sourdough breadcrumbs
- 1/2teaspoons dijon mustard
- 500grams beef mince
- 1/2 cup olive oil
- 1 egg, lightly beaten
- 1/2 cup tomato chutney
- 4 hot dog rolls

Method
Step 1 of 4
Grate onion and zucchini and squeeze out excess moisture. Combine in a large bowl with mince, egg, breadcrumbs, oregano and 2 tbs chutney, mixing together well with your hands. Roll into 16 balls.

Heat cup oil in a large frying pan. Cook meatballs, turning frequently for 8-10 minutes until browned and cooked through.
Step 3 of 4
Whisk remaining oil, vinegar and mustard in a large bowl. Add fennel, parsley and parmesan. Season to taste and toss gently to combine.
Step 4 of 4
Fill rolls with fennel slaw, meatballs and chutney, and sprinkle with parsley leaves. Serve immediately with extra slaw on the side.
