- 1tablespoons olive oil
- 2tablespoons ginger, fresh, grated
- 2 cloves garlic, peeled and minced
- 2 red chillies, deseeded and finely chopped
- 500grams beef mince
- 60grams coconut sugar
- 2tablespoons fish sauce
- 3tablespoons lime juice
- 3 heads little gem lettuce, leaves separated
- 2tablespoons peanuts, salted, chopped
- 1 bunch coriander, fresh, chopped
Description
These lettuce cups are bursting with spicy beef and make a perfect addition to an Asian inspired feast.
Method
Step 1 of 3
In a large frying pan on a high heat, drizzle the oil and cook the ginger, garlic and chillies for 1 minute, add the mince and cook for 7 minutes until sealed and beginning to brown.
Step 2 of 3
Pour over the lime juice and fish sauce and sprinkle in the coconut sugar, cook for 3 minutes until sticky and reduced.
Step 3 of 3
Spoon the beef mince into the lettuce leaves, top with chopped peanuts and coriander and serve.
