  • 1 1/2teaspoons ground turmeric
  • 1/2 bunch kale, stems removed
  • 500grams extra lean pork mince
  • 1/4 cup toasted coconut flakes
  • 2teaspoons salt flakes
  • 2tablespoons vegetable oil
  • 2 microwavable rice & quinoa

Method

Step 1 of 4

Combine kale, coconut flakes, jalapeño, lime juice and 1 tsp salt flakes in a bowl. Using your hands, massage until kale softens. Set aside.

Step 2 of 4

Heat oil in a large frying pan over high heat. Add seeds, remaining salt flakes and black pepper. Cook for 1 minute, stirring, or until seeds pop. Add mince and cook for 1 minute, using a wooden spoon to break up lumps, then cook without stirring for a further 3 minutes or until par-cooked.

Add turmeric, onion, garlic and ginger and cook for 2 minutes, stirring frequently, or until onion softens. Stir in coconut cream and 1 1/2 cups water. Bring to the boil and cook for 10 minutes, adding beans in the last 2 minutes of cooking.

Step 4 of 4

Meanwhile, prepare rice and quinoa following packet instructions. Top rice mix with curry and kale salad, and serve with extra coconut and lime wedges.
