  • 1 long red chilli, deseeded, finely chopped
  • 1 bunch coriander, sprigs removed
  • 200grams snow peas, thinly sliced lengthways
  • 1tablespoons rice wine vinegar
  • 125grams sweet baby corn, halved lengthways
  • 1teaspoons caster sugar
  • 1 vegetarian sausages
  • 1/3 cup light coconut milk

Method

Step 1 of 3

Place coconut milk, vinegar, fish sauce, sugar and half the coriander sprigs in a small food processor and process until smooth sauce forms. Stir in chilli.

Step 2 of 3

Bring a saucepan of water to the boil. Add noodles and cook for 5 minutes or until tender. Add snow peas and corn. Cook for 1 minute. Strain. Return saucepan to keep warm.

Step 3 of 3

Cook vegetable sausages following packet instructions. Slice sausages and combine with noodles. Divide between shallow serving bowls. Spoon over sauce and garnish with remaining coriander sprigs. Serve.
