  • 1 large red capsicum
  • 2 Lebanese eggplants
  • 1 red onion
  • 1/3 cup continental parsley, roughly chopped
  • 2 zucchini
  • 1 pinch pepper (for seasoning)
  • 500grams sausages
  • 2teaspoons olive oil
  • 1 clove garlic, crushed
  • 1 cup instant couscous
  • 1/4 cup currants
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 5

Preheat barbecue or chargrill pan on medium-high heat.

Step 2 of 5

Combine oil and garlic. Slice eggplant and zucchini into 1cm thick diagonal slices. Cut capsicum into thick slices and onion into wedges. Brush vegetables with oil and cook until tender.

Step 3 of 5

Cook sausages, turning occasionally for about 10 minutes or until cooked through. Remove and slice diagonally.

Step 4 of 5

Meanwhile, place couscous and currants into a large bowl. Pour over 1 cup of boiling water and stir well. Cover with plastic wrap and set aside for 5 minutes.

Step 5 of 5

Add butter and parsley to couscous and season to taste with salt and pepper. Transfer to a large platter and top with chargrilled vegetables and sausages.
