- 1/4 cup plain flour
- 1 fried shallot (to serve)
- 1/4 cup hoisin sauce
- 100grams beanettes, sliced
- 1 cup coriander leaves
- 1 1/2teaspoons ginger, freshly grated
- 1 small brown onion, thinly sliced
- 100grams oyster mushrooms, sliced*
- 2teaspoons dried chilli flakes
- 1teaspoons ground coriander
- 1teaspoons ground cumin
- 80grams baby leaf spinach
- 500grams lean pork mince
- 100grams firm tofu
- 1/3 cup peanut oil
- 2 cloves garlic, crushed

Method
Step 1 of 4
Cut tofu into 3cm squares, 1cm thick. Dust lightly with flour shaking off excess. Heat 1/4 cup of the oil in a wok or deep frying pan over medium-high heat. Cook tofu for about 1 minute each side or until crisp and lightly golden. Transfer to a paper towel lined plate. Set aside.
Step 2 of 4
Heat half the remaining oil and cook mince with chilli, in 2 batches over high heat for about 6-8 minutes. Transfer to a bowl.
Step 3 of 4
Add onion, garlic and ginger to the wok and toss over medium heat for 3 minutes, or until softened. Add coriander and cumin and cook for 1 minute. Return pork to wok, add beans and cook for 4 minutes or until just tender.
Step 4 of 4
Add spinach and mushrooms to the wok. Combine hoisin sauce and 11/2 tbs water, add to wok and toss to combine. Cook for 4 minutes. Serve tofu topped with mince mixture, coriander and fried shallots.
