  • 300grams dried thin egg noodles
  • 2 bunch choy sum, halved
  • 3 spring onions
  • 2tablespoons sambal oelek
  • 2tablespoons kecap manis
  • 1/4 cup peanut butter
  • 1/4teaspoons ground cinnamon
  • 1/4 cup peanuts, to serve
  • 5teaspoons soy sauce
  • 500grams pork mince
  • 1/4teaspoons cracked pepper
  • 1tablespoons Chinese cooking wine
  • 1/4 cup vegetable oil
  • 2 cloves garlic, crushed

Method

Step 1 of 5

In a small bowl, combine sambal oelek with 2 tbs oil and set aside.

Step 2 of 5

Heat remaining oil in a large frying pan or wok over high heat. Add mince and cinnamon and cook, stirring to break up lumps, for 5 minutes or until mince changes in colour. Stir in kecap manis, soy, rice wine and garlic. Chop 2 spring onions and add to pan. Cook for 3-4 minutes or until sauce has reduced and mixture is dark.

To make the dan dan sauce, combine all the ingredients with 1/4 tsp cracked black pepper, 2/3 cup water and 1 tbs sambal oelek mixture.

Cook noodles in boiling, salted water as per packet instructions. Add choy sum for the last minute of cooking. Drain well.

Step 5 of 5

Divide sauce between 4 shallow bowls. Top with noodles, mince mixture and choy sum. Slice remaining spring onion and add to bowls with peanuts and remaining sambal oelek mixture. Serve.
