Description

This sticky pork noodle recipe fuses an authentic spicy Asian sauce with soft Wokka thin noodles and juicy rashers of pork. On the table in just 20 minutes this is set to be a family fave.

Method

Step 1 of 4

Remove rind from the pork rashers and cut into 3cm pieces. Place pork in a large saucepan. Cover with cold water. Bring to the boil. Reduce heat and simmer for 1 minute.

Step 2 of 4

Drain pork well combine all remaining ingredients in a medium wok or saucepan. Bring to the boil on high, stirring. Reduce heat to low. Add pork and simmer very gently for about 1 hour, until very tender.

Step 3 of 4

Make Wokka Noodles as per pack instructions. (we only used 1 x 220g for this recipe, but if you have lots of hungry tummies you can use both)

Step 4 of 4

Increase heat to medium. Simmer for 10-15 minutes, stirring, until the sauce reduces to a thick syrup, remove star anise. Stir in noodles to coat with sauce and top with shallots, coriander & squeeze of lime.
