- 450grams Woolworths BBQ lamb kebabs with mint & honey
- 1teaspoons ground cumin
- 2tablespoons pine nuts
- 2 spring onions, thinly sliced
- 4 garlic & herb flatbreads
- 1/3 cup shredded mozzarella cheese
- 1/4 bunch mint, leaves picked
- 1 tomato, diced
- 1 lemon
- 1/3 cup plain Greek-style yoghurt
- 1tablespoons extra virgin olive oil
Description
Top garlic and herb naan bread with seasoned lamb mince, mozzarella, tomato and a drizzle of yoghurt for a sweetly spiced family dish from the Mediterranean.
Method
Step 1 of 4
Heat half of the oil in a large frying pan over medium-high heat. Add kebab meat to the pan. Break meat up with a wooden spoon and cook for 5 minutes or until golden and cooked through. Add cumin, pine nuts and onion. Cook for 1 minute or until fragrant.
Step 2 of 4
Preheat oven to 220°C/200°C fan-forced. Line 2 large baking trays with baking paper. Arrange naan on trays. Sprinkle with mozzarella. Spoon meat mixture over the cheese. Bake for 6 minutes or until naan is golden.
Step 3 of 4
Meanwhile, combine mint, tomato and remaining oil in a bowl. Season. Juice half of the lemon. Combine yoghurt and lemon juice. Season. Cut remaining lemon into wedges.
Step 4 of 4
Place flatbreads on a board. Drizzle yoghurt mixture over flatbreads and top with tomato mixture. Serve.
