- 1 cup orange juice
- 2/3 cup honey
- 1 cinnamon stick
- 6 green cardamom pods, bruised
- 1/4 punnet thyme, sprigs picked
- 3 white nectarines, halved, destoned, thinly sliced into rounds
- 3 yellow nectarines, halved, destoned, thinly sliced into rounds
- 500grams Greek-style natural yoghurt
Description
This simple recipe will become your go-to on a hot summer's day. Cover juicy nectarines in a honey-cardamom mixture and allow to chill for a refreshing treat.
Method
Step 1 of 3
Combine orange juice, honey, cinnamon, cardamom and 1 cup water in a heavy-based saucepan. Stir over low heat for 1-2 minutes or until honey dissolves. Increase heat to high and bring to the boil. Reduce heat and simmer for 8 minutes or until mixture reduces slightly. Remove from heat. Cool slightly.
Step 2 of 3
Place nectarines and thyme in a large glass jar with a tight-fitting lid. Pour honey mixture over nectarines. Place in the fridge for 4 hours or overnight to allow the flavours to develop.
Step 3 of 3
Serve with yoghurt.
