  • 6 large washed potatoes
  • 2teaspoons extra virgin olive oil
  • 60grams unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 6 sweet spiced gherkins, roughly chopped
  • 1/4 red cabbage, finely shaved
  • 125grams corn kernels, drained
  • 1/4 cup pitted black olives, sliced
  • 1/4 cup pitted green olives, sliced
  • 1/4 cup mayonnaise

Description

Take loaded baked potatoes to the next level with mozzarella, gherkins, cabbage, corn and olives. This flavour-packed Turkish-inspired dish will impress the whole family.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Place each potato on a piece of foil. Loosely wrap, leaving the top open. Place onto a large baking tray. Drizzle potatoes in oil, then wrap tightly to enclose.

Step 2 of 4

Bake for 40 minutes, or until potatoes are tender when pierced with a fork. Unwrap potatoes and bake for a further 10 minutes or until lightly golden-brown.

Step 3 of 4

Slice each potato down the centre, being careful not to cut all the way through. Use a fork to lightly mash the inside of each potato. Divide butter and mozzarella between the six potatoes, placing the ingredients at the centre of the potatoes. Use a fork to incorporate butter and cheese into potato flesh.

Step 4 of 4

Top potatoes with pickles, cabbage, corn and olives. Drizzle with mayonnaise. Serve.
