- 1 avocado
- 2 limes
- 5milliliter extra virgin olive oil cooking spray
- 2 Woolworths Crafted pointed sourdough baguettes, cut diagonally into 1.5cm thick slices
- 2 cloves garlic, peeled, halved
- 1 head gem lettuce, leaves separated, torn
- 20 extra large cooked tiger prawns, peeled, deveined, tails intact
- 1/4 cup sweet chilli sauce
- 1/2 bunch coriander, leaves picked

Description
Your summertime celebrations have met their match with tasty prawn, avocado and sweet chilli crostinis – best enjoyed with a cold drink in hand.
Method
Step 1 of 3
Place avocado in a small bowl and mash until almost smooth. Juice 1 lime. Add lime juice and season with pepper. Stir until well combined.
Step 2 of 3
Heat a chargrill pan over medium-high heat. Spray each side of bread with oil. Cook, in batches, for 1-2 minutes each side or until golden and lightly charred. Transfer to a board and rub with cut sides of garlic cloves.
Step 3 of 3
Spread each piece of bread with avocado mixture. Top with a few pieces of lettuce followed by a prawn. Drizzle with a little sweet chilli sauce and season with pepper. Sprinkle with coriander leaves. Cut remaining lime into wedges. Serve lime wedges with crostini.
