- 750milliliter light coconut milk
- 2tablespoons caster sugar
- 1tablespoons vanilla-bean paste
- 1/4 cup gelatine powder
- 1/2 cup sugar-free tropical cordial
- 2 small peaches, halved, destoned, thinly sliced
- 112grams blueberries
- 2 1/2 cups water, boiled
Description
Every creamy spoonful of these delicious peach jelly and vanilla bean panna cotta cups will take you to dessert heaven.
Method
Step 1 of 4
Whisk coconut milk, sugar and vanilla paste in a large jug. Sprinkle 1 1/2 tbs gelatine over a 1/4 cup boiling water. Whisk until dissolved. Stir gelatine mixture into milk mixture.
Step 2 of 4
Place glasses, on a tilt, in 6 holes of a 1/3-cup muffin pan. Pour coconut mixture among glasses. Carefully place in fridge. Chill for 2 hours or until set.
Step 3 of 4
Combine boiling water and cordial in a large jug. Sprinkle remaining gelatine over 1/4 cup boiling water. Whisk until dissolved. Stir gelatine mixture into cordial mixture. Pour cordial into glasses.
Step 4 of 4
Arrange peaches in cordial mixture. Chill for 2 hours or until set. Serve topped with blueberries.
