  • 1/2 cup espresso coffee, cooled
  • 1/2 cup fortified wine
  • 24 sponge finger biscuits
  • 1L tub vanilla ice-cream, softened but not melted
  • 1L tub coffee gelato, softened but not melted
  • 1teaspoons cocoa powder
  • 300milliliter thickened cream, whipped
  • 1 peach, halved, destoned, cut into wedges
  • 2tablespoons blanched hazelnuts, toasted, roughly chopped

Description

It'll take just one hour to make this super simple frozen tiramisu, which uses premade vanilla and coffee ice-creams to pack a familiar punch.

Method

Step 1 of 3

Grease a 10 x 21cm (7cm deep) loaf pan. Line base and sides with baking paper, extending paper 2cm above edges on all sides. Combine coffee and fortified wine in a shallow dish.

Step 2 of 3

One at a time, dip 8 biscuits in coffee mixture, then arrange lengthways over the base of the prepared pan. Spoon vanilla ice-cream over biscuits and gently press evenly into the pan with the back of a spoon to level. One at a time, dip another 8 biscuits into the coffee mixture and arrange on top of ice-cream. Freeze for 1 hour or until firm. Spoon coffee gelato over biscuits in pan and gently press evenly with the back of a spoon to cover biscuits and level. One at a time, dip remaining biscuits in coffee mixture and arrange on top of gelato. Cover and freeze overnight.

Step 3 of 3

Stand ice-cream loaf in pan for 5 minutes, before turning out onto a serving board. Dust top well with all of the cocoa. Dollop top with cream. Arrange peaches on top and sprinkle with hazelnuts. Serve immediately.
