Description

These peppery and delectable little shortbreads make a great party classic.They stand up well to many different toppings, and can be made well ahead.

Method

Step 1 of 9

Place the flour, a pinch of salt, the pepper, diced butter, and grated Parmesan cheese into a large mixing bowl.

Step 2 of 9

Using your fingertips, gently crumble all the ingredients together until they are well combined and resemble breadcrumbs.

Step 3 of 9

Push the ingredients together firmly to form a smooth dough. Pushing them around will help to bring the moisture out of the butter and cheese.

Using a rolling pin, roll out the shortbread dough on a lightly floured cool work surface until the dough is 4mm thick.

Use a cookie cutter to stamp out 25-30 shapes, gathering up Andre-rolling the dough if necessary.

Place the pastry shapes on a baking sheet lined with greaseproof paper and chill in the refrigerator for about 30 minutes.

Preheat oven to 180°C. Remove the pastry shapes from the refrigerator and bake in the oven until slightly golden and crisp, 8-10 minutes.

Remove from the oven and allow to cool on a wire rack until ready to store or top. Store, place on layers of greaseproof paper in an airtight container.
