Method

Step 1 of 3

Lightly oil a baking tray with vegetable oil. Put the syrup and sugar in a small, heavy-based pan and heat until smooth, then allow to boil until the mixture is a dark caramel colour. Remove from the heat and stir in the bicarbonate of soda - the mixture will puff up. Pour the fluffy mixture onto the oiled baking tray and leave for 30 minutes or until completely cool. When cold, break up into smallish chunks.

Put the cream in a mixing bowl and whisk with an electric hand whisk until soft peaks form. Whisk in the condensed milk until well combined. Stir in the honeycomb chunks, then line the cake tin with cling film before pouring the mixture in. Smooth the mixture into the corners, cover with cling film, and freeze overnight until firm.

Step 3 of 3

Remove the parfait from the freezer 15 minutes before you want to serve it, to allow it to soften slightly. To serve, scoop into glass dishes, or slice.
