  • 300grams caster sugar
  • 4 free range egg whites
  • 1teaspoons white vinegar
  • 1teaspoons cornflour
  • 15grams dried strawberries
  • 200milliliter dollop cream (to serve)
  • 250grams strawberries, tops trimmed, roughly chopped

Description

Whip up these incredible festive meringues to wow a crowd. Sprinkle with crushed dried strawberries and serve with fresh cream and strawberries.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Spread sugar into an even layer on the prepared tray. Bake for 5 minutes, or until sugar has just melted at the edges.

Meanwhile, add egg whites to the bowl of a stand mixer fitted with a whisk attachment. Whisk on low speed. Remove tray from oven and use baking paper to carefully pour sugar into egg mixture. Reduce oven temperature to 100°C/80°C fan-forced. Re-line baking tray with baking paper.

Whisk egg and sugar for 5 minutes, or until sugar is dissolved. (To check if sugar has dissolved, rub a small amount of mixture between your fingers. If smooth, it’s dissolved. If it’s grainy, continue to beat a little longer.) Add vinegar and cornflour, and whisk until just combined.

Step 4 of 4

Spoon 6 mounds of meringue onto prepared baking tray. Sprinkle with crushed dried strawberries. Bake for 1 hour 30 minutes, or until meringues are firm to the touch and aren’t sticking to the baking sheet. Turn off oven and leave to cool in the oven. Store in an airtight container until ready to serve. Serve with cream and strawberries.
